Storing green peas: Once winter arrives, peas are available in the kitchen. Be it pulao, paratha, vegetables or snacks, the taste of peas adds a different flavor to every dish, but once the season starts, the problems begin. Fresh peas are no longer available in the market, and those that are stored either turn yellow, have a dull taste, or the peas start to look spoiled due to the accumulation of a thick layer of ice. Many people keep peas in the refrigerator for a year, but due to not knowing the right method, their hard work goes to waste. In such a situation, the method suggested by YouTuber Poonam Devnani comes in very handy. He says that if a little preparation and the right steps are followed, the peas stay fresh, green and sweet for an entire year. The color does not change, the texture does not deteriorate, and the same freshness remains even after cooking.
Do this first thing while picking peas
Storage starts with the right choice. When you remove peas from the pod, don’t make the mistake of putting all the peas in the bag together. Keep large, whole, hard beans aside. Very small, soft or shrunken grains spoil quickly and can affect other grains as well. If any bean looks contaminated or slightly spoiled, remove it immediately. Only clean and uniform grains are suitable for the next step.
Hot water with sugar and salt
Now take water in a large bowl. Add 2-3 tablespoons of sugar and 1 tablespoon of salt. Sugar helps maintain the green color of the grains, while salt helps preserve the grains. Heat the water until it boils well. This step plays an important role in maintaining the freshness of the peas.
Blanching – Just a two minute game
Once the water boils vigorously, turn off the gas and place the peas in the water. Keep in mind that it is not necessary to cook it. Just leave it in hot water for two minutes. This cleans the top layer of grains and determines their color. The pimples often begin to float to the surface – this is a sign that it is time to take the next step.
Ice bath shock
Once you remove the peas from the hot water, immediately place them in cold water mixed with ice. This stops the effect of heat and the grains do not overcook. This trick keeps it green. Filter the grains after 2-3 minutes. Do not ignore this step, otherwise the texture may change.
Need to dry, but not the sun
Now spread the peas on a clean cotton cloth. Do not keep them in the sun. Leave it in the fan air for 4-5 hours or overnight until the moisture on top is gone. If the beans stay moist, they will freeze in the refrigerator and taste bland.
Correct packing method
After complete drying, fill the peas into a zip-top bag or container with a tightly closed lid. Remove as much air as possible from the bag. It is best to pack it in small portions, so that one does not have to take out the entire bag again and again. Now keep it directly in the refrigerator.
Pay attention during use
While taking out the peas, there is no need to thaw them first. It can be added directly to the dish. After repeatedly thawing and freezing the beans become soft, so take them out only as much as needed.
