Ingredients (for two dishes)
-1 poha bowl
– A quarter cup of peanuts
– 1 finely chopped potato
– 1 finely chopped onion
– 1 finely chopped tomato
– 2 finely chopped hot green peppers
– Chopped coriander (as desired)
-1 tablespoon oil
– 1 teaspoon mustard
-8-10 curry leaves
– 1 dry red pepper
– 1 pinch of asafoetida
– 1/2 teaspoon turmeric
– 1/4 teaspoon sugar (optional)
– 1 tablespoon salt
-1-1 teaspoon chili and tomato sauce
-Salt to taste
The method of preparation is as follows
Step 1
First of all clean the poha. Wash it gently in water 2-3 times and immediately filter it in a sieve. Keep in mind that the poha should not stay in water for long, otherwise it will become sticky.
Step 2
Now turn on the gas and heat the oil in the pan. When the oil is hot, add the peanuts and fry them until they become slightly crunchy and then take them out separately.
Step 3
Add mustard seeds in oil in the same pan. When the mustard seeds start to crackle, add the dry red chillies, asafoetida and curry leaves. It smells good.
Step 4:
Now add the chopped potatoes to it and fry for 2-3 minutes. Then add onions and green peppers and cook until they turn light pink. After that, add the tomatoes, mix them, and let them soften a little.
Step 5
Gently mix salt and turmeric in the washed poha. Now put it in the pan and mix everything well. Keep the gas low so that the poha does not break.
Step 6
Now add sugar (if desired), fried peanuts and green coriander and mix. Cover the pan and set aside for 1-2 minutes until all the flavors blend together.
Step 7
Turn off the gas and take out the hot poha in a plate. Top with salted meat, chili sauce and tomato sauce and serve.
Tips to enhance taste
After washing the poha, adding light salt to it helps the taste to penetrate inside. If you like light acidity, you can add some lemon juice while serving. Frying the peanuts separately keeps them crunchy and gives crunch to the poha. Use thin poha, thick poha looks a bit dry.
