Make spicy and light Indori poha like the market at home, learn easy steps
1. First, place the poha in a large strainer and rinse gently with water. Be careful not to crush it too much, otherwise it will become sticky. After washing, leave it aside for 5 minutes until the excess water drains.

2. Now add turmeric, sugar and salt to the same poha and mix slowly. Gently flatten with your hands until the spices are evenly coated in each grain.

3. Next, place a thick-bottomed frying pan on the gas and heat the oil in it. Once the oil is hot, add the mustard seeds. When the mustard seeds start to crackle, add the fennel seeds and chopped green chillies and fry them a little. This will increase the aroma and taste.

5. The special secret of Indore style is steam cooking. To do this, boil water in a large pan and then place the pan containing the poha on it. Cover and steam for 3-4 minutes. This will keep the Poha soft and the taste will improve as well.

6. When the poha starts turning yellow and is heated well, turn off the gas. Add green coriander on top and leave it covered for a few minutes.

The correct way to serve that enhances the taste
Now take out the prepared poha in a plate. Sprinkle finely chopped onions, boondi masala, hot sev and little jeerawan masala on top. Finally, squeeze fresh lemon. Your real spicy Indori poha is ready. If you wish, you can also serve tea or salty lassi with it.

Some useful tips
Take thick poha, thin poha melts quickly. Keep the amount of sugar according to your taste. If you like mild spices, you can add a little green chili pepper. Add only seven while serving otherwise it will become mushy.
