– Leftover rice – 1 cup
– Semolina – ¾ cup
– Curd – ¾ cup
– Water – half a cup
-Salt to taste
– Green pepper – 1-2 (optional)
– Garlic – 2-3 cloves
– Cheese – half a cup (grated)
– Ghee or oil – for frying
– Chili flakes and coriander – optional
How to make
1. Prepare the mixture
First, add the remaining rice, semolina, yoghurt, salt and some water to the blender bowl. Grind it well. Keep in mind that the batter should not be too thick, make it a little thin so that you can spread the dosa easily.
2. Let the dough rest
Now leave this mixture for about 10 minutes. As a result, the semolina will swell and the dosa will become more crispy.
3. Prepare the pan
Heat a non-stick frying pan, put a little ghee or oil on it and wipe it. Due to this the dosa will not stick.
4. Spread dosa
We take a scoop of the mixture and pour it into the center of the pan and spread it thinly by rotating it in a circular motion.
5. Add the layer
Add some oil on the edges and when the dosa becomes light golden, add garlic, green chillies, cheese and chilli flakes on top.
6. Cook and serve food
Reduce the heat and cook for 1-2 minutes until the cheese melts properly. Then fold the dosa and serve it hot.

You can serve this dosa with coconut chutney, sambar or simple tomato chutney, if you want a little extra taste, you can also drizzle butter on top.
