Matka Kulfi Recipe: With the arrival of summer, everyone feels the desire to eat something cold and sweet. It gets special when we talk about Rajasthani Matka Kulfi. Its thick taste, creamy texture and earthy aroma make it even more special. Many times there is a fear of adulteration of kulfi available in the market, but if the same kulfi is made at home then the taste is pure and confidence is complete as well. What distinguishes Rajasthani Matka Kulfi is its traditional style. In this, the milk is thickened by simmering it, and then a rich flavor is prepared by adding mawa and dry fruits to it. Its taste increases even more when stored in a container.
The good thing is that making it at home is not difficult at all. With a little preparation and the right method, you can also prepare hotel-like kulfi at home.
Ingredients needed to make Rajasthani Matka Kulfi
You won’t need many things for this recipe
– 1 kilo of full fat milk
– 250 grams of mawa
– 1 tablespoon of chopped almonds
– 1 tablespoon chopped walnuts
– 1 tablespoon raisins
– Half a teaspoon of cardamom powder
– 4 teaspoons of custard powder
-Half a cup of sugar
All these things together make the kulfi thick, sweet and delicious.
Easy way to make kulfi
1. Milk thickening
First, put the milk in a thick-bottomed pot, add sugar to it, and let it boil over medium heat. When the milk is hot, add the chopped nuts to it. Cook for about 15 minutes and keep stirring occasionally so that the milk does not stick to the bottom.
2. Preparing the custard dough
Now take some milk out of the boiling milk and keep it in a bowl and add the custard powder to it and mix them well. Keep in mind that there should be no lumps in it.
3. Add mawa
Now add the mawa in the main pot and cook with constant stirring. This will make the mixture thicker and richer.
4. Mix the custard and cook it
Now add the custard mixture slowly and continue stirring. Cook for a few minutes until the mixture becomes slightly thick.
5. Cool and smooth
Turn off the gas and let the mixture cool. Then blend it once in the blender until the consistency becomes smooth.
6. Store it in a container
Now fill this mixture in small bowls and keep it in the refrigerator for 4-5 hours.
Tips to make kulfi more delicious
-If you want a richer taste, you can also add some condensed milk
– Adding saffron will increase the flavor of the kulfi.
-If you don’t have a bowl, you can use a steel or plastic mold.
– After it freezes, add the pistachios on top and serve.
