- Pumpkin – 700 grams (remove the peel, wash and cut into large pieces)
- Soaked chana dal – ½ cup (soak 4 hours before)
- Tomatoes – 2 (half chopped)
- Water – 3 cups
- Turmeric powder – 1 teaspoon
- Salt – to taste
- Ghee – 3 tablespoons
- Cumin – 1 teaspoon
- Bay leaf – 1
- Green cardamom – 2-3
- Green pepper – 6
- Ginger – 4 inches
- Red chilli powder – half a teaspoon
- Coriander powder – 1 teaspoon
- Garam Masala – ½ teaspoon
- Black pepper – ½ teaspoon
- Coriander leaves – for garnish
Preparation method:
-First, put the squash pieces in the pressure cooker. Add the soaked gram dal and half the chopped tomatoes to it. Add 3 cups of water, turmeric, salt and close the lid. Boil over medium heat for 5 whistles.
During this time, grind 6 green chillies and ginger in a mortar and make a paste. This will enhance the taste and aroma of vegetables.
– When the cooker has cooled, open it and leave the vegetables in the pot on the gas. Add 3 tablespoons of ghee, cumin, bay leaves and green cardamom and fry.
– Now add the green chili and ginger paste and fry it. Then add turmeric, red chilli powder and chopped tomatoes. Cook over medium heat for 4 minutes until the tomatoes are soft.
– Now add cumin powder, coriander powder, garam masala, black pepper, coriander leaves and fry. Add the boiled bottle gourd and chana dal and mix gently.
– Cook for 5 minutes on low heat and before turning off the gas, add coriander leaves in good quantity.
