What happens when you put rice flour in boiling water?
When rice flour is added directly to boiling water, the starch in it becomes active. This makes the dough soft, smooth and elastic. This is the reason why the dough does not break while making the faras and the shape is formed easily. If you knead the dough with plain water, it may still be a bit stiff, which may lead to cracks while making the faras. Therefore this trick is very useful.
An easy way to prepare the dough for making rodents
– First, pour about 1.25 cups of water into a deep frying pan. Add some ghee and salt to it and boil it well. When the water starts to boil completely, slow down the gas and add 1 cup of rice flour.
– Now stir it vigorously immediately with the help of a ladle or rolling pin so that no lumps form. Once the flour absorbs the water, turn off the gas, cover it and leave it to cool for a while.
– When the dough is still lukewarm, knead it well with your hands until it becomes smooth and pliable. This is the correct way to prepare perfect dough.
How to make delicious dal filling
– The true taste of pho is hidden in its filling. To do this, take pre-soaked gram dal and drain the water from it.
-Put the garam dal, green chilli, ginger, garlic, cumin, black pepper, turmeric and salt in a blender and grind it coarsely. Keep in mind that the paste should not be too smooth.
– Now add the finely chopped green coriander. If you want, you can also add some asafoetida, this enhances the taste even more.
The correct way to shape fur
– Now make small balls from the prepared dough. Roll out one ball of dough with your hands and shape it into small puri.
– Place a spoonful of the lentil filling in the middle and fold it in half. There is no need to close it completely. Leave it slightly open, as this is its traditional shape.
Enhance taste with steaming and tempering
– Now heat the water in a steamer then put the light oil on a mesh plate and keep the pan. Steam them for 15-20 minutes.
