An easy way to make hot pickled onions
Beginning of preparation
First prepare all the ingredients.
1. Cut 3-4 medium-sized onions into thin slices.
2. Cut 3-4 green hot peppers into small pieces.
3. Take some finely chopped green coriander.
4. Peel 8-10 cloves of garlic.
Now put half a handful of peanuts and garlic in a small mortar and crush them lightly. This step is very important because the peanuts and garlic not only add thickness to the pickle, but also add a distinct spicy flavor to it.
Mix the ingredients
1. Now bring a bowl and add the chopped onions, green peppers and coriander to it.
2. Add ground peanuts and garlic.
3. Then add a tablespoon of white sesame. Sesame seeds give a slight crispness to the pickle.
4. Now add salt to taste and half a teaspoon of black salt.
Spices will enhance the taste
Now comes the turn of spices.
– 1 teaspoon chaat masala
– 1 tablespoon coriander powder
– Half a teaspoon of turmeric
– 1 teaspoon cumin powder
– 2 tablespoons Kashmiri red chilli powder
The Kashmiri red chilli gives a beautiful color and the spices are also kept under control. Mix all these spices and mix them well with the onions until each slice is full of flavour.

Tadka of oil and lemon
Now take a small frying pan and add a quarter cup of oil to it. When the oil is slightly hot, add it to the onion and masala mixture. This will improve the taste of the pickle and it will not spoil for a long time.
Now add about 1 tablespoon of lemon juice. Lemon juice softens the onions and adds acidity to the pickle. Once the mixture is mixed well, the pickle is almost ready. Just leave it for 1-2 minutes so that the spices are absorbed into the onions properly.
How to apply and store
Now your spicy pickled onions that can be made in 2 minutes are all ready. Serve immediately with hot paratha, puri, dal rice or khichdi. Its spiciness and peanut crunch will do wonders for eating.
If you like, you can put it in an airtight container and keep it in the refrigerator. It easily lasts for 4-5 days. Just stir it a little before eating each time so the oil and spices blend evenly.

Some little tips
1. If you don’t like extreme spices, reduce the red chilli powder a little.
2. Instead of peanuts, you can also add toasted sesame seeds or garam dal.
3. If desired, instead of onions, leeks (small onions) can also be used.
4. While preparing the pickles, do not add water to the onions, otherwise they may spoil quickly.
5. A little mustard oil can also be used to enhance the taste.
