Now heat 2 tablespoons of oil in a frying pan. Add mustard seeds, whole red chillies and curry leaves. When a slight aroma appears, add peanuts and a spoonful of chana dal and fry it a little. Now add 4 medium-sized boiled potatoes after breaking them. Add salt and kashmiri red chilli powder as per taste. Mix well and mash lightly with a masher. Finally, add the finely chopped coriander. Your filling is ready.

Step 3: Prepare semolina balls
Now add one tablespoon of oil to the semolina mixture and knead it well until it is smooth. We take small balls from it, spread them on the palm of the hand, and stuff them with potato filling. Then close it in a circular shape and shape it like a kachori or a ball. Prepare all the balls in the same way.

Step 4: Steam and bake
Heat water in a pan or steamer and place a strainer or mesh over it. Place the prepared semolina balls on them, then cover them and leave them on medium heat for about 15 minutes. This will cook the inside of the balls. Now heat some oil in a pan, add mustard seeds and place the steamed balls. Cook, stirring briskly, until golden on both sides. Sprinkle sesame seeds on top.

How to apply
Remove the hot semolina potato balls into a plate and serve them with green chutney or tomato sauce. If you like, you can cut them in half and serve them like burgers.

Tips for perfect taste
The semolina mixture should not be too dry, otherwise it may explode while making the balls. Don’t keep the potato filling too wet. Bake it only after steaming, only then you will get a soft texture on the inside and a crispy texture on the outside. If you like, you can also add carrots or peas to the filling.
