A chef’s decision to add chicken stock cubes to dal makhani has divided food lovers, reigniting the debate over culinary innovation versus tradition.

A seemingly simple modification to a beloved Indian dish has sparked a major food debate online. Celebrity chef George Calombaris recently found himself at the center of controversy after he shared his version of dal makhani, a rich and creamy North Indian dish. The item that caught everyone’s attention? Chicken stock.

Traditionally, dal makhani is prepared using whole black lentils, kidney beans, butter, cream, and a blend of spices, all slowly cooked for hours to develop its distinctive flavor and texture. The dish is widely celebrated for its vegetarian roots and comforting taste. However, Calombaris’ recipe took a different route by incorporating chicken stock, a move that many social media users felt changed the essence of the classic dish.
Foodies, home cooks and fans of traditional Indian cuisine flooded the comment sections with opinions. Many have argued that the addition of chicken stock changed the character of dal makhani and made it difficult to consider the dish authentic. Many users claimed that while experimentation in cooking is welcome, some recipes are so closely tied to culture and tradition that major changes can feel disrespectful. Social media users were quick to express their opinions.
One commenter wrote: “It’s all good as a lentil dish but it’s not dal makhni. It looked delicious but calling it dal makhni wasn’t a good idea.”
“Chicken dal!!!! This is definitely a recipe for a non-vegetarian. And it’s not whole black lentils, is it? I’ve modified it a lot. I think you should call this dal by another name,” someone else commented.
Humor also found its way into the discussion. “This is not dal makhani but dal shekhani,” one user joked, a comment that quickly resonated with others after the discussion.
Another questioned the need to change a vegetarian staple, saying: “You have so many non-vegetarian foods already. Why turn something authentically vegetarian into a non-vegetarian dish using chicken stock?”
However, not everyone disagreed with the chef. Some defended him, saying viewers missed the point. “Common people, have some sense and read the title first. He literally said it’s his version of dal makhani, not an authentic recipe. You can disagree with that, but at least understand the context before you get offended,” a supporter wrote.
